Abstract


ABSTRACT
Fruits that are available at any time of the year and can be found in all provinces in Indonesia are Tomatoes, Oranges, Apples, Grapes and Pears, although not all of these fruits are native to Indonesia. One technique for consuming fruit is by mixing several types of fruit and processing it into juice. The purpose of this study was to determine the polyphenol content and antioxidant capacity of this fruit mixture, whether the same, higher or lower than the polyphenol content and antioxidant capacity of a single fruit without being mixed. The research method was carried out by measuring the total phenolic content and measuring the antioxidant ability of fruit extracts against DPPH radicals. Data analysis was carried out in a descriptive qualitative manner. The results showed that mixing the fruit can increase the total phenol content of the fruit and can increase the antioxidant capacity of the fruit. The degree of acidity of the fruit is a balance of all the degrees of acidity of the mixed fruit Keywords: total phenol, antioxidant capacity, fruit mix
